My awesome parents bought me a new crock pot for the holidays and this tortilla soup was the first thing I made in it. Surprisingly fresh and incredibly easy!
Easy Crock Pot Tortilla Soup
32 oz. chicken broth
28 oz. diced tomatoes
16 oz. canned corn
16 oz. black beans
fresh jalapeño pepper
2 cups shredded chicken (I used THIS. So what? I was feeling lazy.)
1 1/2 cups salsa (I used THIS.)
shredded cheddar cheese
fresh lime juice
1. Combine all ingredients (minus the chips, cheese, cilantro, and lime juice) in your slow cooker.
2. Cook on low for 6-8 hours or on high for 3-5 hours.
3. Distribute into bowls.
4. Add cilantro, lime, tortilla chips, and cheese.
