Quinoa and Cucumber Salad

Here’s a quick side-dish recipe that utilizes Trader Joe’s Fully Cooked Organic Quinoa.  So easy, so healthy, and so delicious!

Ingredients:

1 pack of Trader Joe’s Fully Cooked Organic Quinoa

1/2 cucumber, quartered lengthwise and sliced crosswise

1/4 cup sliced green onions

1/4 cup finely chopped Italian parsley

2 tablespoons white balsamic vinegar

1 tablespoon extra-virgin olive oil

salt

pepper

Directions:

1. Cook the quinoa according to the directions.  Pour into medium/large bowl and allow to cool to room temperature.

2. Add vinegar, oil, cucumber, green onions, and parsley to bowl.  Season with salt and pepper.  Mix well.

3. Serve at room temperature or chilled and enjoy!
